
1 cup butter softened
1 cup sugar
1 egg
2 ½ cups all purpose flour
2 tablespoons orange juice
1 tablespoon vanilla
1 teaspoon baking powder
- Combine butter, sugar, and egg in a large bowl.
- Beat a medium speed until creamy.
- Reduce speed to low; add flour, orange juice, vanilla extract, and baking powder.
- Beat until well mixed.
- Refrigerate until firm, 2 hrs.
- Heat oven to 400.
- Roll out dough on lightly floured surface, 1/3 at a time, keeping remainder of dough refrigerate, to 1/8 to ¼ inch thickness.
- Place 1 inch apart on ungreased baking sheets. Bake for 6-10 min. or until edges are lightly browned. Cool completely and repeat for other 2/3.
